Thats interesting. How does the whole private chef thing work? I'm not planning doing huge catering jobs. As of now, I still have a full time job. I would like to be able to setup in a busy place and not get a $10K fine.
BTW, I dont know whay I put this in show us your smokers. It probley should be moved to smokers. Sorry for that. Being sober stinks sometimes.


If you are trying to do this to cater.  I would suggest that you find out what is acceptable from the health Dept stand point and work back from there?? 

The biggest thing you are going to find is that you will need a commerical kitchen to work out of to do the catering thing, well legally.  If that is not available you will be working as a "Private Chef". 

Before you blow a couple grand on a cooker, determine the use and then find the one that fits that use.  Think not just cost, but ease of use.  How much do I need to babysit it.  For a commerical gigs that is important.

and once you find that perfect cooker, buy the next larger one.

Private chef is basically you're hired to cook at a clients place and you "cook" on site.    If you are looking to set up road side or such, the commerical kitchen will probably be needed to get the proper permits.

Yea, I have read a ton of stuff. Seems like the chef thing is the way to go to start. Every thing I will do will be on site. One of my biggest issue's is I dont have a truck. I sold my dually last year. I will be using my Magnum, so the trailer will have to have some storage.

I don't know how it works in your neck of the woods but when we first started out years ago before we bought our concession trailer, we use to rent the local school cafeteria for 50 dollars a day and we were always happy with the arrangement!!!

a lot of church kitchens are health department certified too from what i understand.

guess if you are using a magnum you need to address trailer weight. not to mention included supplies. so what is the max tongue weight and loaded weight that the magnum can handle?

If you get it, there's a Lambert's restaurant in Ozark, MO. You'll have to stop by and try their "throw'd rolls". Plus the rest of the food is pretty good.

I saw that on one of those pig out shows. Looked pretty sweet. Getting ready to head over to the contest. Try and gain a little more knowledge. How far are you from east texas smokers? Look like nice units.
