I have been working on and off over the last few weeks on some new UDS's.  Here is the first one I have that is painted and ready for a fire.  I just need to work on the firebasket this week...

I painted it first with just the black and then couldn't help but dressing it up a little by stenciling on some graphics...

Well our team bought 6 drums, so as long as everything turns out we'll have a half dozen new reasons to cook every weekend...

The final piece to the UDS No7.....

I am currently in progress of maintaing a decent fire in my new UDS to monitor temps.  Everything works out ok and my brisket on Saturday will come off 'ole No7.

I will post finished pics later tonight of the drum with all the handles and everything on it.

The coals have been burning now a solid 3 hours and I can control the temperature within just a degree or 2.  I have had it steady anywhere from 275 to 225 before altering the ball valve and playing around to set it at new temps.  I cannot believe how easy it is to control!  What a great investment.  I figure all in I have about 80 dollars or so in this unit and about 16 hours (including burning times to get rid of internal liner).

Now I am confident with the design and can start working on the other drums this week as well.

For cooking, lower and slower. For spices, mo' hotter, mo' better. Habaneros rule!

Compare the Charcoal usage to your offset.  I think that drum might fit in the fire box of our offset???

So how did the final cook go??

Toys......

Considering I came home from work today and opened the ball valve all the way and 1 cap and had 230 again (on the same charcoal I started yesterday at 5:30 pm) in 20 minutes I'd say there's NO COMPARISON.... :o

So far it's been burning over 27 hours at temp..... ;D ;D ;D

Ordering a Stoker tomorrow......Nowhere to go but up from here!!

Mike, aside from burning out the liner in the drum, it should only take about 3 hours or so to get the drum assembled including the fire basket....  I welded the pipe nipples today to the drum so they don't turn...it took like 25 minutes....so overall basically 4 hours of your time.  What are you waiting for?? ;)

Cooked on the new UDS this weekend for the event.  It worked fantastic although I have to admit out of habit I was up all night watching it anyway.  I also learned a good lesson regarding the wood.  The drum smoked from the time I put the wood on until I took the meat off.....I think it was way too much (smoke) in the brisket.  Smaller pieces of smoking wood next time will do the trick nicely.

Stoker's coming in this week...anyone know if I need to get any adapters to fit the fan on it to the 3/4" pipe nipple on my UDS?  I ordered the dual Stoker so i beeter get busy and build my other UDS....
