Well I have only cooked in it two times now and it did an awesome job both times. I have never cooked in one this big so boy is there a lot to learn about temp control; rate at which the fire burns wood, air flow and the list goes on and on. Yes it is only 16 gauge but you know I put a blanket on it what a different that made. I will more then likely insulate and put an interior wall in it one of these days. But first I have to finish the wife’s master bathroom and the outdoors kitchen and outdoor dining area well you get the point. I need to increase the water pans to cover more of the cooking area. There are few little things I have found I need to do to it but nothing too big. All part of the learning curve I guess.

Thanks for all the replies.

Timm, what you can do is grab another gang box, guessing Vegas will be slow for awhile, and build a second one with all your mods. That way you won't have any down cooking time or interrupt your learning curve. Although I guess your learning curve won't be too long. Take care and keep posting. ;D ;D ;D

Or, as Groucho Marx was known to ask, "Are you married, or happy?"
Now we know why I'm looking over my shoulder...

Truth be told, any man that gives his wife a sword cane has plenty of confidence. ;)

I went past a junkyard on S 51st Ave. yesterday that had 2 of those toolboxes. And a big old safe lookin' thing made of heavy steel, with heavy duty latches. I don't even know what it was.  The lot also sold wood, although the proprietor said all they had was mesquite. He said he knows Thomas @ BBFW...
You know who I mean Thomas?

For cooking, lower and slower. For spices, mo' hotter, mo' better. Habaneros rule!

Hmmm I wonder what you call it when you get her a pistol?  Am I in trouble now?  Should I be looking over my shoulder?
