Just got off the phone with Chris at gator pits. I am next on the board. He said will bout 3-4 weeks for pit to be done. It will be headin to AZ bout same time I am.

So - is a new pit like a cast iron skillet?  Does it need "seasoned" to build up the patina ???

I figure that you must have to put some smoke through it to get it up to par.

We may need to help run a few batches through yours to "test out" the theory, of coarse taste testing each one to see if it gets better over time ;)

Sounds good to me. Taste testers welcome.
 Yes it will have to be seasoned before I cook on it. I will be spending the better part of a day to season it and getting the tuning plates set.

Unfortunately, I will be out of town the next two weekends, so I won't get an opportunity to help you break it in until after that.  (Unless we do a week day  ;) )
