Bigger isn't alway better, Crash is right look into UDS I built one last month and love it I cook on it about two time a week, I have two big smokers and only use one of them about once every two months.

I'm telling you UDS is where it's at.

I mean bigger so I can do more at one time.  I had to cook 8 shoulders with this thing, I was up for about 26 hours between the 3 batches I neeeded to do.

I think I could fit 4 butts in my UDS so build two of them and let them cook for hours.

Don't get me wrong I love my Pro Q's.... But... I am having fun with my drum.  Have only cooked on it once but hope to fix that this weekend.  Bigger doesn't always mean better, just get multiples!!  I think we have 4 Pro Q's, 1 WSM, 2 Smokey Joe's, 1 built UDS, and 1 unbuilt UDS......  Think we have a problem??? LOL :D

if you want to get more meat into the little offset, the easiest approach is to add more grates.   Sounds simple right.

Actually it is.   All you need is 16 nuts, 16 washers and some threaded stock cut to length.  Then you build legs that lock onto the bottom and top grates to hold them together.

assembly is nut, washer, grate, washer, nut......6" away...nut, washer,grate, washer, nut.    Just make sure you orient the lower grate below the factory "screws" in the pit.   I bought "extra" grates at Home Depot and made them work.   A good pair of bolt cutters will allow you to "trim" grates. 

I'll try to dig up a picture of this from mine.  At one time we had 4 NB offsets set up this way.  One had 3 grates so I could cook a bunch of ribs.

There's a mod on a different forum to add a grate to NBBD/Brinkman Smoke 'n' Pit and other similar units...you run 2 lengths of allthread horizontally thru the smoking chamber from side to side, one close to the front of the smoker, one near the back, rest the grates on them. Cap nut on one end, wing nut or standard on the other end. Obviously, won't work so well on "clamshell" offsets, where the top half the chamber is hinged versus just a door. I you'd like, I'll track down a link to that. Just give me the high sign!

20 minutes into the future...I found the link. Here it is, whether you want it or not. First he installs a smoke/heat deflector, then puts tuning plates in the bottom, then adds the upper shelves. Makes an OK smoker into a pretty good one.
