Memphis style sauce

This is a base recipe for Memphis style bbq sauce. This is basically for wet ribs there, but I think it works for just about anything.

2c cider vinegar
1c cider
1 beer or 12oz red wine (no milwakees best or mad dog 20/20)
1c ketchup
2 small sweet onions or 4 shallots
2 cloves garlic
2 tbsp olive oil
1c brown sugar
1 jalepeno
1c rub
1c water

In a sauce pot, heat the oil over medium heat. Have the onion, garlic, and jalepeno minced (best if just zapped in a food processor). Toss in the pot and stir for about a minute. stir in the rest of the ingredients. Reduce heat, cover and let simmer for 2 hours.
If you want a thicker sauce, just disolve a couple tbsp of corn starch in 1/4 c cold water and stir into sauce.
