Most store-bought bottles of Mojo Criollo marinade contain refined sugar and preservatives and so does bottled sour-orange juice.

Here's an easy recipe for fresher tasting homemade Mojo (with an optional 'secret' ingredient!).

This stuff is great for any pork or chicken dish.  You can even strain it and inject the liquid if you want.

Cuban pork is one of my all-time favorite things. You can juice the ornamental oranges you find all over town. Those are the sour oranges in the recipe.
