Title: First try at making a BBQ sauce
Post by: Tempe BBQER on May 29, 2010, 01:38:32 pm
Well I got the itch last night to try and make a sauce, found a recipe that looked good and went from there... I must say I think it turned out really good for a first time.. Trying it on the family tonight so hope they like it...
We will see how they like it ;D

Very cool to hear.  What recipe did you use??  Spicy, sweet, tangy or just original??

Good luck Ed. When I make sauce, I try to let it cool in the refrigerator for 24 hrs to let the flavors meld. ;D

It's got a little bit of a kick to it.  I was messing with it a bit again today, but I will get it back in the fridge to let the flavors mesh, never thought of that.. Thanks :)

I was very very happy with it, and this was my first time trying to make it... I cannot stand ketchup so I made it with tomato sauce.. (but I hate that as well) :) if I had to make it with ketchup, I dont think it would have ever happened!!!!

You're only limited by your own imagination. If you go to Alabama, they do a white BBQ sauce made with mayo. You get a couple hundred miles east of the Mississippi River, and the sauces go towards mustard and also vinegar. Unless you're doing this commercially, make it to your and yours taste. Have fun with it. Paul Kirk has a very good book about making sauces and recipes for sauces. ;D

Make sure to take good notes Ed.  I know that a lot of us have tweaked a HM sauce and once we got it perfect....we couldn't remember exactly what we put in it.

We've all done it without taking notes.  As soon as you find a recipe that you like (and forget)...you'll start remembering to write it all down.  Like I said, we've all done it .  ;)

We're in the same boat with that ketchup thing, but I broke down and used it, cuz 90% of the recipes start with it. After you add the vinegars and brown sugar and honey, etc., you've moved far enough away from ketchup...
Do you only eat white or pesto pizza?

I just don't think I could do the ketchup thing !!!! I would not be able to taste it just knowing its in there...
I do eat Pizza... from NY originally, so grew up with it.. But I do like pesto and garlic pizza.. make my own pesto comes out yummy :) I don't eat pasta vary often because of the sauce!!!

think of ketchup as and ingredient... it simply process tomato with vinegar and spice OR you can create a sauce with tomato sauce, vinegar and spices on your own too. either way you look for a balance finished product...

Definitely make notes!! I have made some good stuff that I have trouble repeating! Nothing beats a home made sauce. And it's a nice bragging point at your BBQ's ;) Whenever possible I try to make my own sauces. Usually a week or so in advance of the event so all the flavors can come together. My wife likes to refer to me as the " mad scientist"....lol

And labels, so when you have a bottle you like, you know which notes it goes with!

that's why i like dry rub ribs  ;) no need 4 sauce ....but if sauce is needed i take 1/2 cup jack Daniels BBQ sauce  add 1/2  cup  brown sugar 1 tablespoon maple syrup 1 tablespoon apple cider vinegar plus 1/2 cup water  and a sprinkle of ground cinnamon. for heat throw in  teaspoon of ground chili powder or Cayenne .... sometimes i also use 5 spice highly underrated
