It seems no matter how try to prep them, skin scrapped, skin trimmed, injected, not injected, it still comes out bad. The skin is rubbery and slides away from the meat and my sauce is far too thick. Every other meat I'm really pleased with. We'll figure it out hopefully. See you soon!
Since I'm a Noob to AZ and AZ BBQ, I have some questions regarding this event. Can someone help me navigate the process for Cooks meeting, Load in and other basics? We're not sure if we'll be able to get away for the Friday activities, but would love to compete on Saturday. Little details like turn in sequence and times would be helpful too. We haven't registered yet because life is still a little chaotic at present. Any help offered will be greatly appreciated. Thanks, Dave
