Nice try Johnny, not gonna happen. The marriage is still too fresh on this end to call it quits my friend. Looks like yours is gonna be lonely a bit longer. Sorry. :laugh:

It looks like you've got a lot of useful info here to work with.  I suggest you try a cook with the water pan with no water in it.  Make sure to wrap the water pan in foil though.

I did not even think to ask that, I just assumed  :(  ...when I said I use no water...what I ment was I use no water in the pan!!!  The pan is in the cooker where it should be and is covered in tin foil.

Did you have the water pan installed?

You can cook on the PROQ without the pan (mini UDS) but you have to be VERY careful with the temps.

It seems to me, that if you can shut off the charcoal, by shutting all the vents, you can control the heat by using the vents.  (At least, that's the way I see it.)

My ProQ will shut down the charcoal at the end of a cook, so I'm pretty sure that I can bring down the temps by adjusting the vents.  (I'll try tomorrow, after I finish my turkeys.)

Currently cooking with a newly built UDS,(thanks to Skouson, my brother) which is my current best smoker.  I've also got a Weber Performer, also from Sterling.  My brothers think I'm CRAZY.  (Strangely, they're right.)
