I use a roasting rack upside down, it holds 6 racks of trimmed ribs.  I have to bend them in a little on the sides if the racks are long.

I have only done 6 at anytime but i image with another rack I could do 12 at a time, but I do like to lay them flat once I foil them so with more than 6 they would need to be on top of one another. I can only fit 3 ribs per grate flat.

I've used three stacker at once before. Back in the pre-Lang days. You can get the lower grate hot enough for chicken, and the top grate will be good for ribs. I didn't have anything on the middle. Do the butts and briskets first, pull them, wrap them good, and put them in a cooler or Cambro. They'll hold while you cook the chicken and ribs.

I wrapped a brisket in foil and 2 towels, stuffed in a cooler for 4-5 hours. Still too hot to hold for more'n 3-5 seconds when I unwrapped it. It works..

For cooking, lower and slower. For spices, mo' hotter, mo' better. Habaneros rule!

We use a rib rack on ours, just like Ralph has.  It's a roast rack that doubles as a rib rack.  We can easily get six trimmed racks on each level of the Pro Q Excel 20.  Total cook time is about 6 hours....total smoke time, about 2 hours.

Sorry, I've been sold out for a while.  I'd suggest eBay or CL, but be prepared to spend close to $300.
