We did a 10 hour cook yesterday using water in the water pan. We smoked an 8lb butt and 2 racks of ribs using two stackers. The temps held steady between 225-270 for a solid 10 hours. Temps were at about 240 for a vast majority of the time though. Once the temps rose, we closed off bottom vents. Once it dropped, we opened bottom vents.
I was again pleased with the temps and can only imagine what a Stoker would offer.
The only drawback was that we did burn through a bit of Kingsford. Good thing we loaded up when it was on sale.
