New Pro Q excel 20 is here

Well it showed up yesterday and it is very nice and BIG. 8)



I bought it on EBAY and the price was very reasonable.

What can you guys tell me on how to use this sucker? 
a.  How much charcoal for say a 6 hour cook?
b.  Arrangement of lit coal and unlit?
c.  Use of water pan, does it hold down temp a lot?


I have an apple orchard so apple wood is not a problem and some hickory in the back yard.

Anything to help a noob out :-[

I normally cook with 2 of the three stackers and a 1/2 full water pan... I always use a full basket of fuel along with a full chimney... I put the unlit lump in the basket then light the chimney on top of them. When it gets good and hot I pour the coals over them and spread them around so they burn evenly.

I may waste some fuel in using a full basket everytime but it's better safe than sorry.... It's pretty easy to add more but it's just a pain to light a new chimney and pull the stackers...

I would read all the posts in this PROQ section...lots of good info in there also you will be able to see how each person does it a little different.


For me...No water in the pan but I do wrap the pan in foil to make clean up easier.  Full load should last you about 6 hours.  I load her up and then dump  1/4 to 1/2 of a lit chimney on top of the unlit coals. I usually leave a little space/dip in the middle for the lit coals, but dumping them right on top works for me.  Top grate will run 20 or so degrees cooler then the bottom. I have never used a 3rd stacker.  YMMV

congrads on the Pro-Q E20, You will enjoy it. I bought one on ebay myself. I do not use water either, instead I foil the water pan then I place a 16" clay saucer wrapped in foil in the water pan. Works great and makes it easier to get up to and keep temprature.

I started out with a heaping full basket, about 18lbs plus a half full chimney lit and poored on top just to get an idea about how to regulate the amount of charcoal per time. There are lots of variables to this so your gonna have to get to know your smoker, but you will get it. Good luck and enjoy the Q.....Joe
