Just got my ProQ

I picked up a ProQ Excel 20 with the stacker the other day.  I am seasoning it today and poppin her cherry tomorrow.  I did a lot of research on the proq and the wsm and choose the proq.  I hope I made the right choice.

it's all about getting to know her!

no matter what you cook on, take the time to get to know her in all kind of situation...

cook every time you can, any kind of weather, rain or shine, windy days, hot days, keep on cooking to find out her behavior in all terrain!

It took me 2 years and I still learn what I can get away with each time

Well had my first cook on it yesterday, I am used to a offset using only wood so this minion method and bullet style is all new to me.  My chicken thighs were good but the ribs sucked.  I need to just practice with it and I will figure it out.
