1)  Remove the thermo from the lid.
2)  Use a small wrench to hold the nut on the back of the thermo dial.
3)  Turn the actual dial while the probe is in boiling water so that it is set to 212 deg F.

Crash, after reading this, I went and looked at the lid thermo.

Here's a couple of different suggestions.  Set up a decent thermo, near to your ProQ.  See what the ambient temp is, and turn the thermo to that temp.  (If the nut holding the thermo is tight {I tightened mine finger tight) the needle won't move, but the body of the thermo {and the numbers} will.)

Or, wait until the top of the hour, and get the temp from the radio, and adjust to that.

Although, you might get more accurate temps in the cooking range, by putting your remote thermo through the upper vent holes, while cooking, and synch the 2.

Oh Crash, I've got RangerJ's ProQ, and am a happy camper.  I'll be doing 5 turkeys for friends this Thursday.

Currently cooking with a newly built UDS,(thanks to Skouson, my brother) which is my current best smoker.  I've also got a Weber Performer, also from Sterling.  My brothers think I'm CRAZY.  (Strangely, they're right.)
