Post by: Homerfeltheim on March 18, 2015, 04:45:12 pm
I need a sauce I can brush on to the loin as it smokes plus use as a pan sauce for serving. any suggestions? I'm thinking maybe combine some apple sauce with yellow mustard, garlic, ginger and some apple cider but am afraid the sugar content may burn

I'm a big fan of Thai sweet chile sauce for pork. It's sweet, garlicky, tangy and thick and makes a nice glaze. The sugar in it will caramelize if you apply it to early, but you can brush it on several times to make a nice candied surface.
