Pork Belly Pastrami

This Chicago joint cures pork belly, coats it with a pastrami rub and then smokes it. Sounds interestingly good. :P

Citizen Public House in Scottsdale has a pork belly pastrami with rye speatzle.  It's a great rich dish.

I make pastrami using brisket, first making Corned Beef then taking it the next step to Pastrami.  I'd think the pork belly would be so fatty for pastrami.  I do cure and smoke my own bacon using pork belly, but that's it.
