Hey all, this event is now officially locked down.

We are still looking for & needing SPONSORS who want to be a part of this event. So if you have anyone that would be interested, they will have a dedicated audience for several days as most people camp out there the entire weekend. Contact me for more info.

Hey all, I've gotten some calls about RV Spots.
Your entry includes a space for you and your set up.
There are NOT any hookups where we will be located, it will all be dry camping on gravel.
There are a bunch of RV spots very close to where we will be setting up so a few of the BBQ Competitors have reserved some of those at their own cost.
If you want to do this, you are encouraged to do it sooner rather than later as there are not a lot of them & they will book out way before the event.
You want the "T" spots if you do. Just let them know you are going to be there for the BBQ Comp & you want a spot close to where it will be at.

Just an update on this event, we have locked down a few great sponsors including Shamrock Food Warehouse. We will have more details on this soon.
Your entry fee gets you 2 nights entry at the park for 1 vehicle/RV. This is good for Friday & Saturday nights ONLY and ONLY for dry camping with the 110 electric we will provide to you for lights & augers..
If you want Full RV Hookups or if you want to arrive early or stay later, you will need to contact the park directly & book your spots. Their number is (800) 475-3272 The spots closest to where the BBQ Comp will be are the "T" Spots.
If you have extra cars/people that want to come out, they will be charged the daily entry fee at the gate.

I'm flying in from Kansas City, MO for this event. I've only done KCBS comps, so I apologize in advance for some of these questions. I've read the 2 page BCS Team Competition Rules and Guidelines.
- Are the judges certified at this event?
- Is the turn in order Chicken, Ribs, Pork, Brisket and what time is the first turn in on Sat.?
- Can the chicken be a combination of two cuts as long as there are 6 of each?
- Do we need a health permit? We were a late entry.

I'm sure Mike will correct me where I am wrong when he sees this, but to the best of my knowledge:
1) Head judges and 1 judge at each table need to be certified. The rest may be certified, but also may be general public.
2) Noon - Chicken, 12:45 - Ribs, 1:30 - Pork, 2:15 - Brisket, 3:00 - Kids Q (optional)
3) Different cuts are welcome, though it is highly recommended to put 6 samples of each in the box.
4) A health permit is required if you are selling samples, but not to compete.

So just to clarify #3. Two different types (parts) of the chicken may go in the box as long as there are 6 of each, so in this case, 12 total pieces of chicken would be in the turn in box, 6 of one and 6 of another. Is this okay? The reason I ask is that the chicken rule didn't mention "or any combination" like it did for the pork and brisket. Thanks again!

Good point. I don't see why you couldn't put different cuts, but I don't have that answer.
Oh, another difference between BCS and KCBS is the condition of the meat upon inspection. Based on my understanding, meats may be trimmed/cut, as long as no seasoning/flavoring is used prior to inspection. Also, fires can be lit at the team's discretion, but meat can't go on until inspected.
I would love for someone with more knowledge of the details would weigh in. We go over the rules in the cook's meeting on Friday night, but these would be helpful answers for planning.

Hey man - If you do the same thing you do in KCBS, here in BCS you will be fine. We do KCBS also and the only difference is the time between turn ins. (45 minutes instead of 30 minutes). Same 10 minute window. 5 before, 5 after.

Thanks guys for responding, we are down in Tucson catering & don't have great access to the internet.
For all the turn ins, you can use different cuts as long as you have 6 individual pieces of each.
The rest is as AZ Redneck stated.
I'll be sending out an info e-mail hopefully on Monday or Tuesday.
We are working to obtain a Health Permit for each team for this event so that everyone can participate in the Public Sampling as this really helps our Charity out.
Green Mountain has donated a Jim Bowie for us to use as an incentive for this. More details on this will be in the email.

Lance ~ I have no problem judging either rib, I mostly cook loin back babys at home... Some may put in 2 bone cut..

Will we be setting up in the dirt field or on the paved parking lot?
How big of spaces will we have to set up in?
Do we need a health permit or food handlers card to sale samples?

Danny, I'm about to send out an info e-mail.
If you don't have an RV Spot Reserved, you will be setting up in Gravel.
Each team has a 20 X 20. If you need more, we need to know ASAP.
We are working with the Health Department to get Health Permits for all teams. We should know by Friday if this was successful. It's looking like it will be.
You will still need a Food Handler's Card. You can get that online by visiting http://www.maricopa.gov/2268/Food-Service-Worker-Training
I think the cost is like $7.

Schedule of Events
Friday night activities:
3 PM - Food Trucks on site (Tropic like it's Hot & We Knead Dough)
5 PM - Cooks Meeting in the Events Building (Turn in Building)
7 PM - Appetizer Party in the Events Building (Live Entertainment with Josh Roy & 3rd & Long)
8 PM - VIP Party at AZBarbeque (Meet the Sponsors & mingle)
10 PM - Park Quiet time (I know, what's this??) Just keep it reasonable.
Saturday Activities:
8 AM - Breakfast provided by AZBarbeque, Glendale Fire & Shamrock
9 AM - BCS Judges will walk around with official Time Clock
11 AM - Judges arrive, Judges Meeting
11 AM – Charity to start selling Sample Tickets, Teams can start Handing out Samples.
11 AM - Food Trucks on site - (5 & Diner & We Knead Dough)
11 AM - 3 PM - Best Booth Judging
Noon - Chicken Turn in
12:45 PM - Rib Turn in
1:30 PM - Pork Turn in
2:15 PM - Brisket Turn in

Pleasant Harbor was my first BCS event. I was thinking with the low entry fees and no National Sanctioning this would be a bit of a Mickey Mouse contest. To the contrary, this was a GREAT contest. Michael and crew put on a first class contest and I had a great time. Thank you so much. AZBarbeque Rocks!
