Shrimp Ceviche

I am in the process of whipping up a small batch of this tonight as a side dish for tomorrow's BBQ.  I'll post pics once it is completed.

1lb of 26-30 shrimp
8 limes (juiced)
3 Roma tomatoes diced fine
1 small red onion diced fine
1/2 jalapeno diced fine (seeds removed)
5 sprigs worth of cilantro, leaves removed and diced fine
5 green onions diced fine
1/2 t Sriracha Hot Chili Sauce
Clamato to taste

Shell shrimp and chop each one into 5 or 6 pieces.  Place shrimp in a jar and add lime juice.  Add lid and shake jar until lime juice and shrimp are incorporated.  Rest in fridge overnight, shaking jar as often as you can. 
Drain half of lime juice and add remaining ingredients.  Serve with tortilla chips, tostadas or in a chilled martini glass.

Is this like the shrimp cocktails you can get in Mexico?  You know the ones with the little baby shrimp in a tall glass?

Yes, but with larger shrimp.  It didnt last long enough to be photographed.

It almost sounds like fish taco baja sauce, without the sour cream and mayo.  Not sure if that would go well with shrimp though.

I too have made this twice (in the last week), I used spicy V8 to add a little more kick.  Very good.

I needed the kick too that is what i used too(v8spicy) and i added some diced  avacado too yummmm!!  ;D I love this stuff Dave haha lol

Yep, Mike very tasty stuff.  I found that the 41-50 size worked well, cut basically in half and were cheaper at 3 bucks a pound.
