Killer Macaroni and Cheese

Jeez Dean, WTF is wrong with you?! ;)  Do you not understand that some people might be lactose intolerant, or even worse, on a diet?!?!  I am neither of these (although the latter wouldn't hurt) so do you think this will make a nice side dish to Lunch Lady's pizza?  I am expecting all of these items the next time I see you!!!

I am lactose intolerant but can attest to his Mac & Cheese, we almost didn't make it out of his house with the bowl as the kids were freakin' that Dad was taking the whole pot to a picnic!!

Munched up myself and it eeeeeeees goood!

We've made this recipe a couple times since Dean first posted it.  It received high marks in my household.  I had seen the "Patti Labelle Mac and Cheese" recipe before but was never motivated to try it until Dean posted his pics.   Thanks Dean, now I just need to get around to trying my hand at your Bowl O' Red recipe.

This recipe is missing one thing...let it cool down. roll into balls, coat in breadcrumbs and deep fry it.

I call them "cheese pills" have them with me at all times!! They work great so I don't have to miss out....

  I just made a variation of this:

 I left out the eggs( just forgot to put them in), substituted pepper jack for the MOnty Jack, added a pound of browned organic  ground beef and   some Ragu "sketty" sauce.  Layered up the "oni"/cheese mix, beef, sketty sauce several times to make a mock lasagna.

 Topped it off w/ Pecorino Romano  w/ 5 minutes left in the bake- transfered to a broiler to brown the top.

 I'm in heaven.
