Impressive and extensive experiments about this age-old debate. I found it especially interesting how many Mexican cooks never soak.

Most of the time I use canned but I would cook dry beans probably with some chicken stock/bouillon. I add chicken bouillon with water to cook my rice and potatoes if I make mashed taters..
