hi - I'm bbqfromaz. I've been grilling and smoking for many years - my Dad taught me when i lived back east in NY. My grills are : gas grill (need a quick dinner and don't want to turn on oven or range in house), Char Griller with SFB (not the best smoker but a great grill for bbq), and my latest tool: Weber 18.5" WSM. Totally enjoying using this smoker. I usually smoke at 225-250F. Going to try to cook my Thanksgiving turkey on the WSM. Need to achieve 275-325F. Everything thing I read said this is doable.
