turkey smoking question

Hello, I am a newbe here and have a couple of questions. I was wondering if any one smoked a turkey on a turkey cannon and if so how long it took and i am using apple wood and wondering when i should stop adding wood for smoke when turkey temp, is at 140 degrees, thanx for info

Here is what I did a few weeks ago.

 Turkey Cannon Smoking Instructions
Soak cheesecloth in butter, garlic powder, and Montreal Chicken seasoning (2lbs butter for 20lb turkey).
Cook at 220 up to 160.
Unwrap turkey and take the smoker to 300 to brown the skin.
Cook to 170.
Put in a pan in the smoker. Cook 6 to 7 hours for a 20 pounder.

What I've heard/read is that smoking at our normal temps leaves large turkeys in the 'danger zone' of 40-140 for too long. I figure that 2-4 hours is long enough for a turkey to taste like smoke, so I smoke turkeys at 300-350. Apple is hard to beat, for sure! I think I spatchcocked the bird last year. This year, I have a 9 lb. turk. to smoke. Shoot, we'll only be able to pass that around once!

For cooking, lower and slower. For spices, mo' hotter, mo' better. Habaneros rule!
