Hello to all from Queen Creek.
Been here for a little over 4 years... I learned to 'que from my best friend's grandma back in San'tone; mainly brisket and ribs. I like pork so much that I also had to incorporate butts, shoulders and whole hogs. I had a "custom" Lexington-style cinder block, tin and cardboard smoker that I fabricated. It was great and extremely efficient. My boys, 13 and 8, dismantled it to make steps so they could jump over the wall and have easier access to the local circle K.  So that was my excuse for purchasing a custom H. Hinkle trailer mounted unit. It's huge. It has 6 trays that hold over 20 butts each. I think I went overboard but it was hard to resist. It holds steady at 250 deg. rain or shine. I recently got a hold of 2 truck loads of pecan and peach logs and put them to good use this weekend. I've never cooked with all wood before and I've got to say that it was awesome. Everything went right. I cooked 8 butts, 60 lbs of chicken quarters, 6 racks of ribs and 5 briskets over the course of 18 hrs. The final product was by far the best I've ever made and I really feel that the wood had a great deal to do with it.  Of course my wife thinks it was because she made the rub this time  :P. as soon as I get a new digital camera I'll post pictures of my unit and my wood pile.

Welcome to the site. That sounds like a great BBQ, post some pictures of it for us to see.

Hopefully we get to see you at some of our local competitions, we do have a ton of them planned over the next year.
