New Guy Introduction - BBQn' From Mesa AZ

What's going on everyone. Just like everyone here I love BBQn' and just got into smoking early this year. I was turned onto this site when I picked up some wood from Berry Bros and told Thomas I was smoking my first brisket this weekend. He quickly gave a card and said, "Everything you need to know is on this site". So far so good. I'm looking forward to this weekend. This will be the first time I use wood for cooking so I'm praying this is gonna come out good. Time will only tell. I've been doing a lot of research on various site and hopefully lady luck will be in my corner too. I've been grilln for years and told wife I wanted to try smoking, so for xmas last year she bought me a Brinkman smoker. My first set of ribs didn't come out at all, I over smoked them and just killed the meat really. I'm sure the pig that gave them up wasn't too pleased, so I tossed them and tried again. The second time around, pretty good and been hooked every since. Smoking meat is another art form and just like everything else takes time and patience to learn. I look forward to tossing ideas around with everyone on this site and learing as much as I can. Here's a pic of some Ribs, Shrimp and potato's I did on my grill. The next pic is some chicken quarters and ribs I did in the smoker. Thanks and happy grillin everyone!

Welcome DAVID! There are bunches of us here! When I first started, I used way too much wood. Little goes a long way. One guy phrased it as "try to undersmoke your meat". Seems to work. I just keep forgetting! Good luck to ya. The food looks wonderful!

Thanks for the warm welcome! I picked up my brisket last night from Costco, untrimmed and trimmed it up last night when I got home. I'm gonna keep the fat and place it on the top rack over the brisket and let it melt over it while she's slow cooking. I put my dry rub on it last night, wrapped it in plastic wrap and threw her in the fridge. 16 hours from now she's going in the smoker. Thanks Dave for the comment about the wood, I'll be sure to watch that carefully. But I do have one question now that I think about it. Is it easier to bring my smoker to 275 then let it drop down to 220 or build the fire up to 220? Does it make a difference? I'm using Oak and Pecan.

For us, it's easier (and faster) to bring a fire up in temp than to take it down in temp.  We do also use a draft control system though.

Is it easier to bring my smoker to 275 then let it drop down to 220 or build the fire up to 220? Does it make a difference? I'm using Oak and Pecan.

just like Crash, I use a draft control system... so I make a pretty small fire and let the fan take over... depending on the weather, I should be at 250F within 40 minutes. Th fan just land on it smoothly and keep it there as long as I have fuel to burn.

Welcome to the family. If you make it out to Queen Creek this weekend look us up. You can check out what competition is all about. Doing our first competition there. I had never even seen a BBQ competition until I went to the Scottsdale one in April. July helped AZBarbeque team in Williams AZ and well, you know what they say, the rest is history.
