Hi everyone,
My name is Brian. I live in Safford, AZ and I'm just getting started in the bbq scene. I enjoy cooking and grilling with friends and family. Two years ago I traveled with my wife and daughter to the Kansas City area for a friends wedding. The caterer was a family member with a nice smoker on a trailer. I was amazed at how great the food tasted. I payed close attention to some of his techniques and asked a lot of ??'s. Luckily, he was happy to answer my questions and give me some advice. I purchased an offset smoker from Wal-Mart to try out what I learned and invited the family over to be my guinea pigs....LOL!! I smoked a brisket and some chicken. The brisket was OK and the chicken had good flavor but was tough on the outside. I'm still learning and I've done a LOT of research on how to build a better smoker. Hopefully, I'll have one built and tried out before the Starr Pass BBQ Classic in October. I don't plan on competing but I will be attending events to help me improve my skills. I look forward to meeting and learning from everyone at AZ BBQ. I'll be posting pics of my smoker project soon!!! O0 :police:

Thanks everyone for making me feel welcome!!! I got started on my smoker build today. I got the tank cut to the length that I wanted and cut all the pieces for the firebox. The hinges are built and the smoke chamber door is marked and ready to cut out. I would have done more but a thunderstorm rolled in and I had to put away the plasma cutter and welder. I'll keep you posted and hopefully add some pics pretty soon. Thanks again!!!!

Hi everyone,

another pic!!! this week I will be working on the firebox door and the cooking racks. I'll be at the Starr Pass BBQ Classic this weekend and then I'm gonna work on the smoke outlet and trailer mount. My father in law gave me an old jet ski trailer to mount the smoker to so I can tow it to family gatherings. 8) :P

Yes, it's on a car lift...LOL!!! I cut 3 feet off of the tank because it was longer than I wanted. The smoke chamber is now almost 6 feet long and 30 inches diameter.
