Hello everyone,

I am new to this forum. I live in Houston (actually Surgar Land) TX. Recently bought 2 ProQ 20's, one for myself and second for my son-in-law in Austin.  Bought them from on of the Phoenix area ebay sellers at a very nice price.  I have cooked a brisket and port butt so far and have been happy with the results. For Super Bowl Sunday I will give ribs a shot. Still going through the learning cure regarding temperature control, however the disucssion on this forum has been very helpful.  Will be receiving my Maverick FT-73 this week which I expect is going to help a lot.

My smoking experience is primarily in using a large horizontal smoker on a trailer.  At one time I would cook for 600 people at our church picnic. Always wanted my personal smoker and did not really want a heavy vertical unit at the house. So I started looking at the WSM and then stumbled across the ProQ 20.

Look forward to chatting with you all further in the future.

For cooking, lower and slower. For spices, mo' hotter, mo' better. Habaneros rule!

Welcome. I love my Pro Q, and have tamed the temperatures. Once you get it dialed in, it will be even more fun to cook on. Glad to have you join us.

I am in Greatwood at the intersection of Highway 59 and Grand Parkway. This is still Sugar Land even though it is on the south side of the Brazos river. Some of our neighborhood has a Richmond address.
