Hi, I'm new to this whole forum blogging thing, but I love cooking and eating. I'm a firefighter that tries to feed my guys some good grub. I treat them now and then with some smoked meat when time permits. I love everything there is to do with smoking meat. The time, smells, taste and the love put in. I am building my first UDS and have a ProQ. My wife asked why did I need another smoker. I laughed. Just wait until I cook her something in it, she'll see. Guys at BBQ Island told me this is a good place to get and share bbq ideas. Already got some advice on posts. Happy smoking and GO DEVILS!

Glad you came on. I'm in the same situation. If I ever hope to compete, I'll need another cooker or 2. I have an offset, but I can't use it since I built my UDS. Long long burns, plenty fuel left over, faster cooking. I'll need 2 or 3 UDSs to use different woods for different meats, different temps for different cuts....oh well. I can wait. One is good for now.
Hope you have lots of great pics to share with us. We'll throw all the help you need your way!

GOSM big block, Weber 22.5 in one touch, AMZN cold smoker. I Grow NM Heritage 6-4, NM Jalmundo, NM Vaquero, Poblano,Serrano Tampiqueno. Habaneros are Orange, Antilla, Bondo Ma Jacque, and Red Savina. I use mesquite, cherry, apple, alder, and red oak chunks.
