My name is TJ, aka "New Guy".  I have been smoking meat for @ 10 yrs, off & on.  I currently live in Greeley, CO (about an hour N of Denver), but I'm currently trying to get a job transfer to the Phoenix area.  In the next 10 yrs, I'd like to try some competitions and, upon retirement, maybe a restaraunt.

Looking forward seeing all the ideas people have to share...

Welcome, TJ. We hope you land your AZ gig. We look forward to meeting you. I like your plans, but I must say that retiring to run a restaurant is like retiring from jogging to run a marathon. ;)

For cooking, lower and slower. For spices, mo' hotter, mo' better. Habaneros rule!
