Well enough lurking for me, I am the Asparaguy. I have long been a fan of grilling and just recently smoking (cold and hot). Favorite cold smoked dish is "Smoked Tomato Bisque" as for hot, well, anything really. I have done some brisquets, cushion and yardbird as well as made some rubs, all with pretty good results. Has to be beginners luck!
I came into possession of my Uncle Paul's smoker recently and have can easily see why he liked it so much. It would seem a certain passion for this form of cooking is a driving force here; I can see this in your posts. Not to get mushy or anything but, you guys are "Totally into it!î Where do I sign up? Hey guess I already have.
You guys have been a wealth of info already. I have hit brisket plateau, been rubbed the wrong way and yes, while I hate to admit it, suffered from dry brisket! All easily solved by little reading in the forums. Thanks for posting your recipes and findings on all things smokey!
I am off to make ìNew England Boiled Dinnerî for the family. It isnít smoking but it does involve brisket and I have never ìcorned a beefî, it should be fun. Guess I know what I can do with that extra brisket !
