Hey there, name's Guss, and food is big in my life I was a chef, been a restaurant manager, and food is my favorite vice. I found this group and couldn't resist joining considering my friends and I want to get into the competitive BBQ circuit for kicks.

What a great resource! The event Calendar has to be the best, honestly. Now I can see what's coming up and my buddies and I can plan how we're going to enter, what we're going to do for it and all that good stuff!

Awesome, I can't wait to read and learn and experience what's going on.   O0

Welcome aboard!! We've got some great cooks here who are willing to share advice, as long as it doesn't intrude on secrets. Check out the rules for KCBS and IBCA events to see what you need to do for turn in. There are a few posts in the forum with links to KCBS rules--do a search for that term--and likely for IBCA too.
Glad you're here, and post pix of your smoker and cooking!

For cooking, lower and slower. For spices, mo' hotter, mo' better. Habaneros rule!

welcome Guss!

this is the perfect place to answer any questions you WILL have onec you start hitting the circuit!

25 years as a chef and most of that experience went out the window once I started to compete... :'(

the best way I can describe it is this; think of it as preparing a beautiful meal with on a camp fire and in the middle of a mall parking lot during a wind storm... and that should give you an idea:)

cheers
