By N central I mean close to Northern and Central,.  . I smoke almost exclusive with Pecan wood. I find that it is a lite smoke that does not overpower the meat when smoking for long periods.  I would like to find some apple wood and try it, I hear good things about it also

We cooked a whole hog for Thanksgiving. I got a 85lb pig and STUFFED it with a 25lb turkey and a 5 lb chicken. We stuffed the cavity with the birds after adding rub and injecting them, then sewed them inside to keep in the juices.  18 hours and 225 degrees and a bunch of pecan wood, a tent for the rain, and a bunch of rum and coke later we were rewarded with what I think was the best meal I have ever had
