Just stumbled onto this site from the "Smoker Cooking" site and surfed it before joining, What a Great Place. I am retired military and after traveling the country/world trying different BBQ I have truly loved the flavors. I have tried for many years trying to duplicate the tastes with charcoal or gas grills. I have even tried the wood chips in the smoker box on my gas grill, to no avail. Recently I purchased a small brinkman charcoal/water smoker. I have not yet used the water portion of the smoker yet, just the charcoal and wood chips/chucks and I have finally found that TASTE I love. Now I spend allot of time surfing the web looking for new recipes and techniques for the smokers. I am lucky as my family like BBQ and don't mind being my test subjects. I don't think I am ready for competition yet but would love to go and watch a couple of these events and taste the food.

Thank you all for the nice welcome.

I tried to start a new topic and post some pictures, but my files are too big. Can any one tell me how to resize them so I post a couple of pictures

Welcome! Microsoft Photo editor also has a resizer--I was lowering my pics to 30%, coming out to about 640X480. Now I'm using Flickr and/or Photobucket. Hope to meet you at some events. Are you in town? or another area of AZ?

For cooking, lower and slower. For spices, mo' hotter, mo' better. Habaneros rule!
