I have cooked and barbecued all my adult life but since retiring from the Valley up here I have decided to take this barbecue hobby a little more seriously. I was born and raised in a restaurant family and was interested more in the "back of the house" part of the business. I have had a cheap old Char Griller that I love and recently added the offset fire box. It opened up a new world to me. Managing a fire, types of wood thick smoke vs thin blue smoke on and on and on. I will be lerking and learning along the way.
