GOSM big block, Weber 22.5 in one touch, AMZN cold smoker. I Grow NM Heritage 6-4, NM Jalmundo, NM Vaquero, Poblano,Serrano Tampiqueno. Habaneros are Orange, Antilla, Bondo Ma Jacque, and Red Savina. I use mesquite, cherry, apple, alder, and red oak chunks.

greek food, chinese food, and a good old fashioned new england super beef 3-way... man-o-man... for those of you who dont know, it may be the best sammich ever. i've heavily considered opening a roastbeef shop around here. they make a killing back home

Think Arby's roast beef but.... good.. not grey mystery meat like arbys has... and their BBQ sauce blows.

3-way is slang for cheese, BBQ sauce, and mayo

you can really only find it done properly on the north shore in MA.

oh, and a super beef always comes on a perfectly buttered/toasted onion roll

Interesting. All my relatives are in New Bedford and Boston, so I'm sure they know of a 3-way, but I had never heard of it. When we're together, its all about quahogs and bacalhao.

i dont think there is much for beef shops in New Beford but i know there is some in East Boston.

but if you want to go for a little bit of a drive the BEST roast beef in New England is either going to be Billy's Roast Beef in Wakefield, MA (Disclaimer: I worked there) or Nick's Roast Beef in Beverly, MA.

Nick's is really one of the original beef shops. a good 90% of the shops in MA were started by employees of Nick's.

Next time you're up in MA try to stop in.

you can get the beef any way you want too. some people like just cheese and sauce, others cheese and mustard or just cheese and mayo.

you can get the beef rare (they slice from the thick part of the beef)
you can get it well done (a. from the skinny part of the beef that cooks faster or b. they can also throw it on the grill for a bit. throwing it on the grill creates a whole different flavor.)

You mean theres something to eat besides BBQ? It would have to be Chinese. But trust me i still find ways to add a BBQ flair to it.
