Despite the challenges of strong winds, rain, and mud, here are the results of the Chuckwagon Cookoff at the AZ National Livestock Show held at the AZ State Fairgrounds on Dec 30th. Each team had to prepare 5 dishes - Meat, Beans, Bread, Potato, Dessert - all using ingredients and methods that would have typically been used back in the 1880-1890 time frame of the cattle drives of that day:

Meat:
1st - Brown Dirt Cowboys (that's us!) Beef Tips in Cream Gravy
2nd - Cowgirls Forever
3rd - Rocking RR
Beans:
... 1st - Rocking RR
2nd - AZ Sharp Shooters
3rd - Canon Family
Bread:
1st - Biscuit Flats
2nd - Brown Dirt Cowboys - Bunkhouse Potato Rolls
3rd - Cowgirls Forever
Potato:
1st - Rocking RR
2nd - Brown Dirt Cowboys - Cowboy Spuds
3rd - Biscuit Flats
Dessert:
1st - Rocking RR
2nd - Brown Dirt Cowboys - Lattice Topped Peach Cobbler
3rd - Biscuit Flats
Best Trail Wagon - Rocking RR
Best Ranch Wagon - Biscuit Flats
Overall was a tie for 1st & 2nd with Cowgirls Forever & Biscuit Flats
3rd place Overall - Rocking RR

A great time & much thanks to Doris French & Rochell Planty & those involved in hosting this cookoff. Some mighty fine cooking despite the challenges of wind, mud, & cold !!

A first and 3 seconds, and not top 3? WTH? Best trail wagon and 3 firsts for RR, and third overall? Wow. Tough scoring system. Y'all must have missed top 3 by hundredths!
Thanks for posting...Now if I just get brave enough to fire up some charcoal, and start out with simple pot roast...That 12" Camp Chef should be equal to the task. All I have to do is convince SWMBO* that I need another camp DO or 2...Yeah, right!

For cooking, lower and slower. For spices, mo' hotter, mo' better. Habaneros rule!

Funny story about doing a roast in the Dutch oven. Several years ago when we first started competing in Chuckwagon cookoffs, we decided to do a roast on the side to demo and not disturb our competition entries for those curious onlookers. I placed some sliced onions in the bottom with the roast on top of them, sprinkled a little Lipton onion soup mix over the top, and then poured a Welch's grape soda in for liquid. After cooking for about an hour, and with a crowd of about 50+ folks around, we lifted the lid to show it off, and to everyone's surprise, the onions looked like green chilies, and where the roast had touched the soda, had turned a kelly-green color !! Someone asked "is it supposed to look like that?" to which I replied "Yes!, thats our St.Patricks Day Roast" and it just happened to be in March, so we were able to pull it off. We were surprised as everyone else, and later discovered that the chemicals they use to make the purple color for the soda, when heated, turns the green color. We had fun with it, even having a little contest to see if anyone could name the liquid we used to cook the roast in -- only one guess of soda pop, but nobody could distinguish the flavor UNTIL we told them, and suddenly the taste buds were able to recognize it.
