Title: Propane cooking

After cooking about 200 tri-tips on a borrowed propane smoker and at the same time cooking about 300 on a Santa Maria Grill I am convinced that for large catering jobs the ability to use propane w/smoke tray is a lot less effort.  I am considering a FAT 50 and want to know if it has the option  to use propane as the primary heat source?  There are times when I am better off setting up a catering job than adding wood.  I want the wood option for competition but need the convenience of gas for catering.

Absolutely. Patrick with Tex-A-Que has a Diamondplate with exactly that option for sale. He's got a nice rig with plenty other options, including the side burner. Check it out in the classified section.

Bill, Yes, you can order one in with Propane inside the smoke chamber to make it easier to cook on.

Let me know if you are interested in one as prices are going up April 1st.

They are great units and hold temp very well.

...but the lids are heavy... :-[ ::)--I dropped Mike's lid, blew up his thermometer. Still trying to overcome the shame... :D

...those things are EXPENSIVE...hope you at least washed a lot of dishes?  ;)

$85.00 at BBQ Island. I don't know if Mike got that many dishes dirty.

Hey Bill, while your statement of easier is probably true with gas, I have catered similar size parties completely on a stick burner.  While I'm not at all saying using gas is wrong, what I am saying is it is possible to just use wood...I'm just sayin! ;D

I think after Kevin got done with me, Mike felt sorry for me!  :)  I found 'em on line for $49ish.
I must admit, he didn't hang me for it. I got him some tokens of my esteem and appreciation for all he does for us anyway. Cuz he deserved some presents.

I have a Klose and cook with logs all the time and love it.  I was with a group that did 17 cases of Tri-tips and 5 cases of ribs and was watching the guys with the gas assist units and was impressed with the ease of use and the ability to use their time more effectively.

I was working with a stick burner this weekend...weed burners work well to "up" the temp  ;)...I bet a high powered burner (ie turkey fryer) could be added to the firebox and then you would have the best of both worlds.

Ralph I bought a burner to try in my small offset and the only concern I have is if the flame would go out there is no safety gas shut off if the flame is lost. The gas would continue to run until a smouldering log used for smoke flavor ignites it. Would not be pretty in and\ enclosed firebox or meat compartment. If someone has a fix for this please post.

I thought about this also the few times I used the burner in my small off set, it was never an issue but for sure I guess it could be.   :o
