Picking up Diamond Plate Smoker

I've ordered a Series 70. Travis says should be done if 4 weeks or so. If anyone is thinking on ordering a DP, I'd be glad to either have you go with me to pick yours up at the same time and split fuel and/or I'll tow yours back and split cost.

Don't listen to him. That's some of the most beautiful country in Texas. The most gorgeous flat featureless sandbox you can imagine. Think of the trip from here to Yuma, only longer, with a few more turns. Oh, and not quite as green. Make sure you stop in Fort Stockton. That's where they make the flies for the rest of the world.

I Got a fat 50 last month,drove from oregon to San Angelo, 4500 Miles.travis is a great guy,I love it, just learning to use it,Steamer is great.I am learning all thr tricks about this smoker.get a lot of looks.I will say if you can have him put a jack stand with a wheel they are heavy and a wheel jack like a boat has would be awesome.

Picked up new smoker last week-end!! It's a beauty!! Fired it up 3 times to season it during the week. Sort of like a cast iron frying pan like so many of you suggested. Sunday had my first cook on it. Not too much... 4 butts, 5 racks of ribs and pan of beans. I will take my chastising as I have no pics to post! Fought the freakin' wind all day which was screwing w/my temps.  :'( :mad: :'(   Worse than a roller coaster.  280 degrees to 200 degrees to 245 degrees to 190 degrees to 300 degrees etc., etc., etc.. Started at 4 am and at 1 pm had meat temps of only 150 degrees. Wrapped in foil, juiced and finished in the convection oven. Was able to finish the ribs on the smoker. Used the tips we learned in Chris Mark's class on both meats. Made a difference!!  Frustration was high, so even though I had the camera in my pocket I wasn't thinking about pictures!!  More practice!!

next time your fighting the wind try turning your pit so the wind is blowing on the fire box, you will find that you need to close the air intake a bit so the temps dont rise to much.
i have had the same trouble with our fat 50 and once we tried turning the pit it made all the difference. a wool blanket from a surplus store helps a bunch as well.
