She is ready. Chris and I are on our way to San Angelo to go pick her up after work today!!  ;D
Wish us luck and we will see you all next weekend in Sun City for her debut. Mike I need some pointers on how to season her. I had a 1/2 cord of wood delivered to my house yesterday from Berry Brothers. 1/4 cord pecan and 1/4 cord apple so I GOT WOOD!!  ;) What else do I need (Pam, olive oil, lump charcoal, etc.)??

Thanks,

Smitty

A practice cook on your DP.  You dont want to try to learn how to cook on a new cooker at a comp.
Nothing at all, looks like you're all set.

Really, what time should we be over?

I would suggest you get a brand new Weed Sprayer.

Then get some Peanut Oil, a large Jar.

Spray the inside & the grates lightly with the oil.

I would start with some regular Charcoal, just a bit, get the temp to about 200 or so, leave it there for about half an hour, then throw on some lump and wood and get it up to 350 - 400.  Leave it there for about an hour, actually, at that point, you can just let it burn out.  You should be good to go..

Call me when you are doing it, or if I can, I will try to stop by, PM me your address if you want.

Have a safe trip.  Can't wait to see it out at Pulte..  Congrats..

For cooking, lower and slower. For spices, mo' hotter, mo' better. Habaneros rule!

Alright - we made it back safe and alive with the smoker in tow. That is one hell of a drive. Chris and I left Phoenix @ 3:45pm Friday night and got into San Angelo, TX @ 6:30am Sat. (They are 1 hour ahead of us). Would have been there sooner but we took a detour in El Paso (long story). Ate breakfast, picked up the smoker went to Academy (Sports/BBQ store) to pick up a thermometer and headed home. Left San Angelo around 8:15am and got home around 8:00pm. Chris posted some pictures on his facebook page but I will take more this weekend @ Pulte and post them up for people to see who won't be at the next comp. She towed perfectly - barely could tell she was behind us. I seasoned her yesterday and when I was taking the lock off of the charcoal grill the weld holding the lock in place just fell right off. I need some help welding it back on.

I'm doing some practice BBQ on Wednesday so If you are in the area (Thunderbird & 60th St.) and want to throw some meat on the smoker let me know.
