Title: Double Decker Spiced Peach Cobbler
Post by: bbqphx.com on August 20, 2009, 05:10:01 pm
I'm really not one for sweets, but am finding it necessary to learn to cook/bake them.  So...other than my less than stellar work on the lattice top, this recipe is a keeper.

8 c. sliced fresh peaches
2 c. sugar
1/2 t. nutmeg
4 T. flour
Combine in Dutch oven and allow syrup to form.  Bring to a boil and cook for 10 minutes or until soft.  Remove from heat and add 1 t. vanilla and 6 oz. butter.  Stir until butter is incorporated.

Layer half the peaches in a 7x11 dish and top with a thin sheet of pastry dough (and no-I'm not giving you that recipe :) ) Bake at 475 for ~10 minutes until lightly browned, then add the remaining peaches and cut strips to work the lattice better than I did...Bake for an additional ~15 minutes until brown on top.  Serve with vanilla ice cream if you really want to make some friends!!

Thanks Mike!!
I forgot the whole inspiration for this recipe though-Peaches on sale at Safeway 0.49/lb. this week!  Country ribs and pork butt are 99 cents as well FWIW.

Hey Mike, what do you say for adding a 'deals' section to AZBarbeque so members can post sales and clearance they find around town?
