Choclate Lava Cakes
Preheat oven to 350, butter and flour ramekins
Ingredients: bittersweet chocolate,
finely chopped 8 oz.; butter,
unsalted 8 oz.; flour,
sifted 3 oz.;
sugar 6 T;
eggs 5 each;
egg yolks 5 each, Ramekins 5 ounce capacity (6)
1. Place butter and chocolate in a large bowl over simmering water and melt together. Remove from heat and let sit to cool slightly.
2. Using a mixer, mix eggs, egg yolks, and sugar until frothy (a couple of minutes).
3. Add egg and sugar mixture to chocolate butter mixture.
4. Fold in flour (2 or 3 additions)
5. Pour batter into prepared ramekins.
6. Bake approximately 10 minutes. Watch for the center to be sunken--about the size of a quarter.

the recipe is very good and worth it

I use a variation in my catering which is the bomb!
6 oz bittersweet chocolate
2 oz semi sweet chocolate
1 1/4 stick of butter
1/2 cup All Purpose Flour
1 1/2 cup Confection Sugar (powdered)
3 large eggs
2 egg yolks
1 teaspoon vanilla
2 Tablespoons Orange Liquor
I mix as you described and bake at 425 for 14 minutes.
Just a small variation but a deep, rich flavor with a hint of orange!

which liquer do you use i would sugest grand marnier great for any dessert

That's a amazing desert recipe. I tired it at place and it was too good specially the chocolate added an extra flavor on it.

I had forgotten this post and never saw the question as to liqueur choice. I like Grand Marnier in a glass but has too much depth for this recipe to me, I use Cointreau or a cheap Triple Sec which works well with the chocolate. I like both recipes as anything with chocolate makes me smile.
