i was looking to make somthing really good , a summer desert any ideas ? Holly

How about a Tequila Lime Tart? I got recipe from Guy's Big Bite last summer.
For the Crust:
Ingredients:
10 ounces of vanilla wafers
1/3 cup pine nuts (I found these at Trader Joe's or Sprouts)
1/2 cup butter melted
Directions:
Preheat oven to 350 degrees
Add wafers and pine nuts to food processor, pulse until well ground up. Pour into a bowl and add melted butter. Mix by hand and with a wooden spoon press into a 10 inch tart pan.(reserve 4 tablespoons of crumbs to sprinkle on top when done baking.)
For the filling:
Ingredients:
2 eggs whites
1 tablespoon sugar
1/4 cup tequila (I use good tequila usually Patron)
1/2 cup fresh lime juice
4 egg yokes
1(14 ounce) can sweetened condensed milk
Directions:
In mixing bowl add egg whites and sugar, beat until there are soft peaks.
In another mixing bowl, add the remaining ingredients and mix thoroughly. Fold the egg whites. Pour into tart shell and bake for 25 minutes. Remove from oven and sprinkle with reserved crumbs. Let cool before cutting and serve with fresh whipped cream.

Wow. I'm not much of a dessert guy (never have room left), but I like to make homemade ice cream. That way, you can add whatever ingredients you want. I've got some leftover pulled pork...hmmm....

Crap I forgot a little hint. Put in a few drops of green food coloring. The egg white leave it pretty white for a lime taste.

This tart recipe would be greener and tarter w/ a teaspoon of lime zest :) - don't put zest into the filling ,until it's done, and then just a little at a time to suit your taste buds.

Not to be a smart a$$, but I don't think there is any such thing as a "cool summer desert."
But a cool summer dessert in the hot summer desert sounds mighty nice! :D

Take two limes, a dozen eggs, a half pound of goat cheese, three tablespoons of mayo and a twelve pack of your favorite beer. Open one can of beer, put all that other stuff back in the fridge, drink the can of beer, then repeat for the remaining eleven cans. It's quite refreshing and takes little effort.

I would almost have to say thats a good recipe, but can the beer be replaced with say tea or soda?

Anything else is too much work for the summer Arizona heat. Just kick back and crack open a cold one...after the meat is on, that is.

Watermelon Granita
8 c. watermelon, seeded and cubed
6 oz. frozen concentrated orange juice, thawed
1 1/2 c. 7Up
You can add your favorite spirit (vodka, Captain's, etc.) just don't make it to powerful as it will not freeze.
Run watermelon through blender or food processor until smooth then combine with remaining ingredients. Put in the freezer for ~8 hours, stirring occasionally. Remove 15 minutes prior to serving, then spoon into bowls or cups.
Simple and refreshing.

Rich and Gooey Ice Cream Cake
24 Oreo cookies, crushed
1/4 cup butter, melted
1/2 gallon ice cream, softened (any flavor)
1 (16 ounce) can chocolate syrup or caramel ice cream topping
1 (14 ounce) can sweetened condensed milk
1/2 cup butter
1 teaspoon vanilla
8 ounces Cool Whip
1. Combine oreos and melted butter, press into 9 x 13 pan.
2. Freeze for 30 minutes.
3. (Take ice cream out to soften when you put this in the freezer).
4. Spread ice cream over oreo crust, freeze for 30 minutes.
5. In a medium size saucepan combine chocolate syrup or caramel, condensed milk, and butter.
6. Bring to a boil and stir continually for 3-5 minutes.
7. Remove from heat, add vanilla, and allow mixture to cool.
8. Spread over ice cream layer, and freeze for 30 minutes.
9. Top with cool whip and garnish with more oreo cookie crumbs.
10. Freeze for 12-24 hours before serving.
