Looks like the board could use a recipe...so here goes...
a couple pounds of chopped up chicken breast (no bones or skin)
an onion
couple cloves of garlic
1 tablespoon marjoram
1 tbsp rosemary
1 tsp oregano
1 tsp pepper
1 tsp salt
Toss it all in a food processor and make it into a paste. Roll up really tight in plastic wrap and set in fridge for a couple hours.
Take out of plastic and bbq at 250 till it hits 160. Let rest for 15 minutes, than cut into thin slices. Direct grill the slices till carmalized.
Serve on warm pita with sliced onion, tomato, feta and tzaziki. Another option is some pitted kalamata olives.
Tzaziki sauce.
one peeled and seeded cucumber
1 pint of plain yogurt
2 cloves garlic
tbsp olive oil
juice of a lemon
dill 1 tsp dried or 1 tbsp fresh
2 tbsp tehine
1/2 tsp salt
1/2 tsp pepper
Put all in a blender and puree.
