Boneless Skinless Breasts

I was just wondering if smoking some of these breasts would be ok.  I know they are pretty small and thin but we have tons of them and prep would be really quick.  If anybody has any ideas or recipes, I would appreciate it.  Thanks again!

Personally I would pound them down so they were nice and thin put some cheese and Chille Peppers in them wrap them up in bacon and smoke.  :P

I agree with the bacon wrap - boneless skinless breasts when smoked will tend to loose some moisture. The bacon wrap will help retain some moisture and add some fat (fat is flavor!!).

Tried some yesterday;



Too dry for my taste. Next time I'll try brining them after I pound them out. Haven't given up on the idea, just first attempt sucked. ;D
