Bear's overindulgent no recipe, recipe for chicken

 This one is straight out of the can but lacks nothing in flavor.

Skin on, bone in chicken..whatever parts you like. I tend to use thighs for most everything. I's a fat to meat ratio thing for me that has the flavor I prefer. Other cuts will work fine

Pat dry yer chicken. Toss in frank's buffalo sauce...just enough to coat.
Let marinate for at least a few hours, overnight works great.
Right before cooking, season moderately with Tony Chacherie's.
If'n ya like yer own cajun seasoning
2tbsp kosher salt
1 tsp black pepper
1tsp cayenne
1 tsp onion powder
1 tsp garlic powder
1 tsp celery seed
1/2 tsp ground rosemary
1/2 tsp thyme
1/2 tsp oregano
After seasoning..smoke, grill or fry.

For frying, add just enough flour toy the seasoned chicken without draining any liquid...coat well. allow to rest on a baking rack for 15 minutes. Now is a good time to get the frying pan/dutch oven up to temp. I like to use cast iron frying pan and vegetable shortening. During the rest. the flour will turn into a batter from the moisture of the water from the chicken and he hot sauce. For extra crispy right before adding he chicken to the oil, dredge the chicken again and shake off excess flour. Drop into 350 deg. oil. cook for bout 15 minutes for wings and drumsticks. 20 minutes for breasts and thighs.
