Title: Wood Info
Post by: BERRY-BRO on July 18, 2006, 12:55:28 pm
Ok, here's a little secret that some of you may already know. When we bring wood into our retail yard it comes cut to lenght but not split. We process tons of wood year 'round. As we split and sort the wood for sizes, anything that isn't a PRETTY split log goes into a separate pile. I call this pile our CHUNK pile (not junk!). Most of the pieces in the Chunk pile are Knots and Crotch sections, these are denser and harder than the straight pieces! We keep the different cooking wood types separate from one another so there are usually several piles accumulating here. The secret is this: if you ask for the Cooking Chunks you will save almost 50% and get a better product for your smoker or grill, plus you can pick your sizes and mix 'n match flavors too! If you forget all this, just let me know you want cooking wood and I'll recommend it anyway!
A WOOD tip for the day: The woody stalk of a Rose Bush can be used in a smoker for a great flavor, Apple is in the Rose family and the old, hard, woody part of a rose bush gives an almost identical flavor as Apple.
Should I post this stuff somewhere else? Thomas

Thomas,

I put it in the BBQ Discussion section.  This way it is easier for everyone to find.

That is really great info, I will make sure to get some of it when I am in next time.

That is exactly the type of info and suggestions we appreciate here, anytime you have anything like this, any specials, extra stock or whatever, just jump in here and post it, I'm sure we have plenty of members who will jump at the opportunities.

Thanks..  ;)

How big are the cooking chunks? reason i ask is the new pit (on way still....long story) is strictly wood burning. I can't use charcoal for heat and wood just for flavor.

Not recommended. I have asked about that awhile ago on the gator pit forum. All the gator owners including Ritch says to use straight wood in the pits.

Thank you for posting the info Mike!
Some more information for anyone wanting to come get wood. It's summer time and we are on summer hours. I personally am in the office Mon-Fri from 7AM till 2PM. I don't load wood however.
If you would like us to load your wood you must get here between 8AM and 11AM Mon-Sat.
If you want to get as much as a truck load we price it so you save money if you load your own.
As far as the chunk sizes go, we typically have all sizes available, fist size on up....if you have a small upright water smoker and you can only use tiny stuff, we have that also, but you bag your own, flavor or wood type doesn't matter. Most of our cooking wood sacks run $15 each, they are 2' X 3' and weigh approx. 50+ lbs. The wild Hickory I am bringing in from Missouri and Arkansas right now and it's costing me $600 per cord to get it here so a sack of it runs $40 right now. If you bag your own wood (any cooking type or size except Wild Hickory) it will cost $15, we provide bags.

Thomas,

I need to come in and get 10 of your big bags of wood for our Annual Guys Camping Trip.  Would like to get something that burns for a while and smells great.  This will be for a campfire, not in a smoker.  I will also be coming in to load up our smoker with wood when we pick it up probably in about 2 weeks from now.

What kind of notice do you need for the 10 bags?  What kind of wood do you recommend?  If possible, I would like to pick the 10 bags up next week sometime.

Thanks again for all your help and support.  Looking forward to seeing you again when I am in.

Mike

Hi Mike,
I recommend our camping special! Shaggy Juniper is one of the best smelling woods you could get, it burns longer than All soft woods and even alot of the hard woods. PLUS it costs the least.
One sack (three times the size of a Circle K bag!!!) runs $8 tax included. We sell 4 for $30 and in your case it would be 10 sacks for $75 less 10% for a total of $67.50 out the door. Each sack will give you a 6-10 hour burn in a normal campfire, (NOT BONFIRE!!!!). Thanks again and give me a call the day before and I'll make sure you'll be set up! 602-244-1422 7....AM-2PM

Hi Guys,
2 answers: I'm here from 7AM  until 2PM, my loaders leave at 11AM but you're welcome to load your own ;D...
No, we don't use chippers, we have about 6 different types of splitters and we process down to fist size chunks....but ....as a side product, the splitting and processing creates tons of small chips! Unfortunately the labor to gather and bag is too expensive so we don't do it. But you are welcome to bag your own, we supply bags or you can bring your own container.

Yes, nice to meet you Mr. Griln4u!
Actually my thoughts were slightly different....and could be considered a "Wood Tip of the Day"!
When cooking with hardwood I have a couple of simple points to remember:
#1 for combined best flavor, highest heat, longest burn, are the NUT woods, these include Hickory, Pecan, Oak, Pistachio, Almond ETC. (Walnut is not included here as it can be TOO smoky!) another bonus with NUT woods is that you can use them almost green without any bad effects (just getting them lit and keeping them going would pose a problem).
#2 for great flavor, high heat but fastest burning rate, there are the FRUIT woods, these include Apple, Cherry, Plum, Peach, Citrus ETC. (I would also include Alder in this group).
#3 For super coals but not the best flavor, there are the BEAN (PODS) woods, they include Mesquite, Ironwood, Ebony ETC. I recommend these for open fire grilling or buried pit cooking! If you can get these types cheap they make execellent coal beads for your smokers! NEVER use Mesquite green in a metal cooker, the bitter flavor will cling forever!
This is all a bit oversimplified but I hope it can be helpful to someone!
Thomas

Thomas,

Great to see you again today, sorry I didn't get a chance to stay a bit longer, but I had an 11 am meeting I had to get to.

Thanks for the wood and having it all ready to go, that was awesome.

I really like your organization method with the business cards, I want to come back in there and write down the names and contact info of all of them to send them some invites to the BBQ Contest.

Let me know if you run short on those flyers and I will bring you some more right out.  We are also having some posters made and once they get here, I will bring you one of them too.

See you in a few weeks for wood for our new smoker.

Thanks again.
 ;)

Hey all, I stopped by Berry Brothers today and picked up a smoker trailer full of Pecan Wood.  He has some great wood out there right now at incredible prices, so if you are needing some, head on over there.  Let them know that you were sent by AZBarbeque.

I took our new rig over there and I think I can safely say they were all very impressed with it.  It does show well.

Thomas, Thanks for all your help and support, you are great.

I know you said you had just gotten some rare, special wood in, if you get a chance, let everyone know what it is and what the cost is.  Hopefully they will come down there and buy you out of it quick.

Thanks again, I will post some pictures of the grill in action late next week.

This is a great thread.  I have been getting my wood from BBQs Galore, and they are rather expensive and the wood sometimes comes with a lot of bark on it.  I will be buying from here from now on.

I'd like to take a moment to compliment Thomas on running a great business.  I've been there on three or four separate occasions, the most recent being just last Thursday.  He always makes time to talk about what he has on hand, what might be in short supply and has always been willing to share his experiences with the different types of wood.

During my last visit we talked about El Diablo lump charcoal and I mentioned that I was not having good experiences with it.  He made a few suggestions including adding some well aged grape wood, (which he had in ample supply, already bagged and tied), and letting it burn down as part of the coal base.  I tried his suggestion and the grape wood out today and he was spot on correct on what a big difference it makes.

If you've never been to Berry Bros. you're missing the boat on all things wood.  I wonder what I'll end up buying the next time I'm there...

Thank you VisionQuest220, I am humbled!
I'm glad to hear the Grape worked for you, unfortunately one of our forumites has all but cleaned me out of the supply I had on hand!!!!
You also gave me a great tip to pass along to others here on the forum....American Charcoal sells the El Diablo to Costco Business center on 3801 N. 33rd Avenue and they sell it cheaper than American Charcoal......$9.99 per 40 lbs Sack!!!! I just called to confirm this, and yes, it's true and yes, they stock it as we speak!
Thank you all for the great feedback and your much valued patronage!

Just telling it like it is, Thomas.  Good people deserve good recommendations.

And who is this rat fink who has cornered the market on grape wood?  I think we may need to send in a "leg breaker" to deal with this situation.  The good news is that the bag I bought on Thursday will last for a while.  Any idea when you might be getting more?

Oh, and for the sake of brevity, just call me VQ.

I just thought of something.  The only Costco location that is selling the 40 lb. bags of El Diablo is the Business Center location at 3801 N. 38th Ave on the southeast corner of 33rd Ave and Indian School.  The Business Center also has a lot of other useful things that you won't find at the other Costco locations.  Check it out sometime.

Guys, just went by Berry Bros today and stocked up my smoker full of Pecan.  So I am ready for the 4 events I have this coming week as well as the Lake.

We will also be picking up a trailer of Pecan for the lake in case anyone needs some, I'm sure we will have some great prices on it out there.  We will also have some wood we will be using in the fire ring for Friday and Saturday night, so that will be nice as well.

Thanks Thomas and Berry Bros, you guys really take care of us and we greatly appreciate it.
