OK so I've always used Gas for grilling.  Now I have a new WSM that produces ash.  How do I get rid of the leftover ash?  What are my options?

Sorry for the silly question.  :-\

You'd have to figure out how this works with a WSM, but I use a disposable aluminum turkey roaster as a drip pan in my Kamado. The next morning I dump all the ash into the grease. It soaks up the ash so I can dump the "muddy" pan into a plastic grocery bag for disposal. No clouds of ash. No grease spills.

Wait until it cools down then dump in the trash.

I have a small metal pail that I use.  I put the ashes in it and either put water on it, put the lid on it, or let it sit for weeks until I get around to dumping it.

Place it in an urn. Then, display it on your mantle, or spread it on the beach.

Be careful... Make sure you leave them for a few days. My neighbor melted his garbage can. Thought they were cool enough to dump but guess there was an ember or two that caused it to catch on fire.

Coals can last quite a little while. Ask anyone who has sifted through them with their bare hand a couple days later. A pea-sized one in the palm will make you do the St. Vitus dance. :o

We always put ours into a metal trash can with the lid secured tightly, then empty the can no sooner than a couple of weeks later somtimes a whole month ! Once when we used to cook whole hogs in the ground 2 months after a 4th of july dinner i was walking out by the pit and the breeze kicked up and i saw sparks and on closer inspection red hot coals down in the hole ! I dug down a foot or two and found 2-3 feet of coals still burning!!!!
