Huh???? ;)  Maybe I just think I taste and smell a difference. Maybe we should all just use scrap pine for smoke since they are all the same!!! :o

I agree with him.  99.8% of people can't tell the difference.  Brandon could because he's awesome but that lady you just gave a pc rib to has absolutely no clue.  She will however know if there is a little smoke flavor vs. an acrid over smoked flavor.  Using different woods give you different levels of smoke and that is all in my humble opinion BUT I do believe that the heavier it is the easier it is to have a closer wag as to what it is.  I use hickory and mesquite pellets at competitions and I have never noticed a scoring difference between the two.  I think most smoke smells are different and some are considerably different such as almond wood.  I'll still stand by my opinion that no one but us addicted to this stuff could even start to make an educated guess as to what something is smoked with.

I have a friend who was the Chef at the Phoenician and used Tamarisk limbs for his smoke flavor which was a uniquely nice flavor, but as I mentioned he is the former Chef as the general public didn
