Prime Time

My wife has bought a boneless Prime Rib she wants me to smoke for Christmas :P Cooked over 100 in the oven but in WSM NEVER !!!! Need some Ideas Please. I have a good Prim Rib rub , just not sure how to smoke it. Any Ideas would be great. 8)

Hey John, You will love it done on the smoker!!  Here is what I posted about how I did a prime rib roast:

On New Year's Day, I smoked a rib eye roast, bone-in, a little over 5 pounds.  Nothing but salt & pepper on it.   I smoked it on my Excel 20 and used a pitminder for temperature control, since it was quite windy.  I used pecan and smoked it at 210 until it hit 115 internal temp, about 2 1/2 hours.  Then I put it in a 450o oven for 15 minutes to get an little crust, internal temp was 130 when I took it out.  I foiled it for 20 minutes, then carved.   Man, was it delicious!!!!

Thank you mike for your responce. I will give that a try. We are looking like 10lbs but I will give it 5-6 hrs before oven

Hey John,

Make sure to let us know how it turns out -- with pictures.  I will also be doing one for Christmas (and maybe for New Year's Day again, too.  I LOVE beef!!!! :P

I do, too. Unfortunately my wife doesn't. So I end up cooking a medium, smallish boneless NY strip roast rather than a rare, massive standing prime rib. I'd be happy with the bones alone. :'(  It is my annual holiday torment.  I envy you guys with a family full of carnivores ready to lap up cooked-rare meat juices like the cast of Twilight. ::) ;) :D
