Title: Korean beef ribs

 Here is a recipe for Kalbi or Korean short ribs. Most local plate lunch joints and all the Korean eateries in Hawaii serve this. Traditionally it is cooked on a flat diner type steel grill or hibchis or kettle grills at the beach parks. It is easily modified for the smoker and using whole slabs of beef ribs.

 Prepare the beef ribs by removing the membranes.

Marinate in.

 2 cups of shoyu (aloha brand if you can find, but any good soy will do.)
1 ggod sized finger or 2 tbsp of fresh chopped ginger
2 cloves of chopped garlic
1 tbsp of sugar
2 tablespoons seseme seeds
2 tbsp of seseme oil
2 small chopped green onions
one thai chile finely chopped.

mix in a bowl and marinate the short ribs for at least 3 hours. Reserve the marinade.

Cook on the smoker till the meat pulls back from the bone a good inch. Mop remaining marinade and cook for another hour.
If using direct grilling method don't get whole ribs, instead find or ask the butcher to cut into half inch slices across the bone.

 Serving suggestions are white rice, kim chee, spicy cucmber salad, nori (seaweed). Or for local plate lunch style, serve with just rice and mac salad.
